The recipe calls for pork, but I am not a very big fan of it so I decided to just turn it into a vegetarian stir fry. I really enjoyed this meal because it was really light (as far a stir fry goes) the vegetables complemented each other nicely, and it was spicy!

This was the first time I ever used ginger before so I really had no idea how to peel it or how it even worked. Luckily for the internet I found this helpful video on YouTube on how to peel ginger with a spoon! Yeah who would have thought, it was actually really quick and easy to do.  I don’t know how many of you have cooked with ginger before but after I made this recipe I started throwing in ginger into any meal I could, it just adds a kick!
